I am interested in doing some video editing and was wondering if an application like Kino were running "on" a diskless MD, would Kino be using the MD's or the Core's CPU and RAM?

It runs on what it runs on! In no sense does the core perform any of the functions for an MD. An MD is a computer just like any other, it just happens to have a remote disk instead of a local one, so instead of mounting its system disk over a SATA bridge, it mounts its system disk over the network using NFS/TCP.

The MD's CPU and RAM.

The diskless boot system of linuxMCE is not the same idea as thin clients.
