Backing up system and media

Looking for some good pointers for simple backup software. Obviously I want to be able to back up the entire system (not data/media), so i can restore in the case of disaster (or tinkering!)

But more importantly, I would like to find some "incremental" back up software for Kubuntu that you could run a complete backup of your media folders to DVD (etc), handling breaking these up over multiple disk automatically. But that after the first (very big) pass, would then keep track of the media files, and you could then just run an "incremental" backup of the differences, say, once per week, to DVD and just stack them safely. Ideally, they would just be simple files on the DVDs rather than some proprietary format, meaning you could just copy them back as and when you felt like it without being dependent on a restore program.

Catalogue features? Handle moved/edited files (MD5?)
