Is it possible to install without being connected to the internet?  Maybe download a script?  Thanks

No, when you complete the install wizard it builds lists of all the software to install based on your choices.  The kick-start cd you download is a 'stock' image--it retrives your custom list of choices during install over the internet.  Since this is done in-line during the setup, there's no way to 'inject' those choices without making a custom .iso image, which would be too impractical.
