I have an MD hooked up to a standard touch monitor through DVI. I bought it for ten dollars at goodwill and absolutely love it for my kitchen; the only problem is that the LinuxMCE screensaver dims the screen to black after a bit instead of cutting off the signal like a normal computer hooked to a standard monitor. Because of this, the monitor's back light always stays on instead of going to sleep. I've tried to adjust the Kubuntu screen saver but it doesn't seem to affect LinuxMCE's.

Can anyone suggest a way to dim the screen or give me the package name that LinuxMCE uses as a screen saver?

DOES work for LinuxMCE.

You should go into the setup wizard, select the room for that monitor, and then select the Generic -> DPMS Monitor. This will allow the running Orbiter to control and turn on/off the monitor properly.
